The paper examines the utilization of regionally southern food to construct a "hyperreal" immersive environment at a major tourist destination in Central Florida. In this instance, southern food is re-constituted to authenticate an experiential fantasy space for vacationers. As a result, traditionally southern food served in the South is no longer regionally southern.
