Abstract
In this interview, Essie Smith Aiken (1897-1983) discusses her experiences as a Baptist missionary teacher in China from 1923-1929. Mrs. Aiken discusses the process of traveling to Hong Kong, Chinese food, the state of Chinese healthcare at the time, and Chinese customs. She also discusses her early childhood and the effect of her faith on her life. She also mentions her time studying at the University of Canton. Mrs. Aiken also recounts her experiences working in a cotton mill and in a high school kitchen at a young age. She also discusses her experiences in the Philippines on vacations and staying near the U.S. Military base in the Philippines.
